Temperature and Ripening: Impact on Pineapple Acidity

The optimal temperature for growing pineapple ranges from 70 to 81 °F. Lower temperatures intensify the pineapple's acidic flavor during the ripening stage, while warm, humid environments reduce its acidity. Notably, pineapples that ripen during the winter in cold areas tend to have low levels of sugar and high acidity.
