U.S. per-capita availability of bell peppers rose markedly from 2.89 lb in 1980 to 10.83 lb in 2024—a 275 % increase. In the United States, total bell pepper volume—including imports and domestic production—has grown by 96 % over the past 25 years.
In 2024, Mexico supplied nearly 60 % of that U.S. volume, with Canada, Florida, and California accounting for the remainder. This upward trajectory continued into 2025, as California’s southern growing region recorded a 143 % increase in production during the first half of the year.
